Superfood Bars

  • 1C sprouted oats
  • 1/4C teff flour
  • 1/3C oat flour
  • 2 scoops collagen powder (I used Perfect Supplements brand)
  • 1/4C sprouted pumpkin seeds
  • 1/2C chopped dates
  • 2Tbsp hemp seeds
  • 2Tbsp ground flax
  • 1tsp cinnamon
  • 1tsp baking powder
  • 1/2tsp salt
  • 1/4C chocolate chips (optional)
  • 3/4C peanut butter
  • 1/3C maple syrup
  • 5Tbsp coconut oil (I used Perfect Supplements MCT Oil)
  • 1tsp vanilla extract

Combine dry ingredients . In a small saucepan combine wet ingredients. Warm and mix until combined. Pour over wet ingredients and mix well. Press into a greased square pan. Bake 20-25 min at 350 degrees. Let cool before cutting them. Enjoy!

These make a great post workout snack! muscle I don’t encourage eating “on the go” – but at times it happens. These Superfood Bars are an awesome grab & go option.

My Disclaimer – I don’t measure much when I bake🤫 So, these measurements are my very best estimates.

Adrenal “cocktail”

Adrenal “cocktail” – provides the body with a balanced ratio of Carb, Protein and Fat, Minerals, Vit C = happy blood sugar! Have this first late morning or late afternoon as a natural energy boost.

Blend together…

  • 4-6oz organic orange juice
  • 2Tbsp coconut cream (try to find an option without any guar gum – aroy-D is good)
  • 2Tbsp collagen (I can order you collagen from Biotics or you can buy your own) pinch sea salt

serve over ice if preferred.

GF Apple Bake

GF Apple Bake – nice to have on hand as a breakfast alternative or for a snack.

  • 1 C sprouted organic oats – One Degree Organic Foods is the brand I recommend
  • 1.5 C oat flour (sometimes I mix half oat and half teff flour)
  • 1 tsp sea salt
  • 1 tsp cinnamon
  • 6 Tbsp organic grass fed butter or Coconut oil
  • 6 Tbsp pure maple syrup
  • 2 scoops vanilla collagen (you can add 1/4 more flour if you don’t have collagen powder) The collagen is getting you some protein that your body is craving right now. It will also help with healing.
  • 2-4 Tbsp non dairy milk
  • 6 medium apples, chopped into bite sized cubes

Preheat oven to 375.

Use coconut oil to grease bottom of 8X8 pan

Combine 1 C oats, 1 1/4 C oat flour, 1/2 tsp cinnamon and 1/2 tsp salt. Mix well Cut 3 Tbsp butter or coconut oil into dry ingredients and mix until crumbly. Add 3 Tbsp syrup.

Set aside in fridge

Make the filling…

Melt 3 Tbsp butter or coconut oil in a bowl. Add 1/4 C oat flour, remaining cinnamon, syrup and salt and collagen powder. Mix Together. Add chopped apples and toss to coat.

Pour apples into bottom of prepared baking dish. Add crumble on top.

Bake for 35ish minutes. Keep an eye on it for the last few minutes to make sure the crumble isn’t burning.

Store in fridge and enjoy cold or warmed up.

You can add some coconut butter or nut butter on top for some additional protein.

Teff Energy Bars

Teff Energy Bars (I’m a huge fan of teff flour:) – these are a great grab and go snack or post workout refuel

  • 2 C dates, pitted and chopped
  • 2Tbsp maple syrup
  • 2 Tbsp almond butter
  • 3 Tbsp coconut oil
  • 1 C teff flour
  • 1/4 C collagen or protein powder
  • 1/4 C chia seeds
  • 3/4 C dried cherries (you can sub any dried fruit – unsweetened)
  • 1/2 C pumpkin seeds
  • 1/2 C chopped walnuts
  • 1/4 C dark chocolate chips (if desired, not necessary to add)

Using a food processor – combine dates, syrup, nut butter, coconut oil until smooth. Add teff flour, protein powder and chia seeds. Add chocolate chips, seeds and walnuts and pulse just til combined,

In a 8×11 baking dish – firmly press mixture into pan. Bake at 325 degrees for 30 minutes. Let cool for approx 2 hours before cutting. Store in airtight container in fridge for up to a week.
